Looking for a yummy, nutritious treat? These raw toffee protein bars are made with cacao nibs which are rich with antioxidants to help reduce inflammation in the body - plus chocolate also boosts your happiness hormone - serotonin!
Method
Soak pecans and cashews over night
- Blend pecans, cacao nibs and a pinch of salt at low speed
- Add dates to blender and pulse at low speed– keeping mixture a little chunky

Gently melt coconut oil and and raw cacao butter and add to blender with soaked cashew nuts, honey, pinch salt, vanilla slender blend and almond milk – blend on high speed until smooth

Pour 1/3 of the dough into a baking tray and place into a freezer for 15 minutes to set

Remove from the freezer and spread the toffee pecan layer across the base

To the remaining mixture add 3 tbsp cocoa powder and pulse through

Place some pecan nuts on the top for decoration (optional)

Spoon mixture on to the top of the other layers and place in the freezer to set for a further 1-2 hours
