Healthy Protein Pepperoni Pizza


  • Pizza Base
  • 160g Slender Pizza Mix
  • 1 tsp olive oil
  • 6 scoops of water 

  • 200g passata (or tinned tomatoes)
  • 3 basil leaves
  • 1 garlic clove
  • ¼ onion, diced 

  • 20g (approx. 10 slices) pepperoni slices
  • Sliced pickled jalapeños (optional)
  • 1 cup sliced mushrooms (optional)
  • ½ tsp oregano
  • 1 tsp olive oil
  • 80g low fat mozzarella, grated

Preheat oven to 220C (200C fan) whilst you make the pizza base as according to instructions. Either use this quantity to make two personal sized pizzas or one large pizza for two people.
Place your rolled-out pizza base on a baking tray and cook (without toppings) for 8 minutes, flipping over after 4 minutes.
Meanwhile, prepare the pizza sauce by blending all ingredients in a blender or food processor until smooth. Heat a tsp of oil in a frying pan on a medium heat and cook the mushrooms with the oregano (if using) for 2-3 minutes.
Once the pizza base is ready. Spoon over the sauce and top with mushrooms, sliced pepperoni and sprinkle over the cheese.
Cook for a further 5 minutes, until the cheese has melted.
