Red Cabbage & Halloumi Salad

  • 4 cups (400g) red cabbage, shredded
  • 1 cup (180g) quinoa
  • 150g halloumi cheese, sliced
  • 1 cup (155g)edamame beans
  • 2 tbsp balsamic vinegar
  • 2 tsp coconut oil
  • 20g mixed seeds
  • 1 tsp salt
  • 1 tsp pepper
  • 1 handful coriander

Cook quinoa according to packet instructions (roughly 10-15 mins).

Meanwhile add coconut oil to a frying pan and grill the halloumi slices until golden on each side.

Once cooked, drain the halloumi slices on a paper towel.

Add cabbage, edamame, quinoa, halloumi and coriander to a bowl and toss into a salad.

Drizzle with balsamic vinegar and sprinkle with the super seeds. Serve.
