  • ¾ cup (180g) almond butter, smooth
  • 6 eggs
  • 2 tbsp honey
  • ¼ cup (60ml) coconut oil, melted
  • ½ tsp apple cider vinegar
  • ¼ cup (37g) golden flaxseed, ground
  • 3 tbsp coconut flour
  • 1 tsp bicarbonate of soda
  • ½ tsp sea salt

  • Preheat the oven to 350F. line a 4x8 inch loaf pan with parchment and grease well with coconut oil.
  • In a large bowl, blend the almond butter, eggs, honey, coconut oil and apple cider vinegar with a hand blender.
  • In a separate bowl, combine the flax, coconut flour, baking soda, and sea salt. Mix the dry into the wet, pour into the greased pan and bake for 35-40 minutes.
  • Enjoy with your favourite healthy toppings.
