Fresh Chicken & Quinoa Salad

  • 1 chicken breast
  • 60g quinoa
  • 1 red pepper - sliced
  • 1 small courgette - sliced
  • 30g pomegranate seeds
  • juice of half a lemon
  • sprigs of fresh mint

  • Grill the chicken breast on a griddle pan
  • Grill the courgettes and peppers or stir-fry in a little coconut oil until softened
  • Whilst these are cooking cook your quinoa by placing it in a pan of boiling water and simmering for 10-12 minutes or until soft
  •  Assemble the salad by mixing together the quinoa with the cooked vegetables, a squeeze of lemon juice, pinch of salt and pepper. Finally mix through the pomegranate seeds and a few fresh mint leaves and serve with the grilled chicken breast
