Fresh Chicken & Quinoa Salad

Ingredients
- 1 chicken breast
- 60g quinoa
- 1 red pepper - sliced
- 1 small courgette - sliced
- 30g pomegranate seeds
- juice of half a lemon
- sprigs of fresh mint

Method
- Grill the chicken breast on a griddle pan
- Grill the courgettes and peppers or stir-fry in a little coconut oil until softened
- Whilst these are cooking cook your quinoa by placing it in a pan of boiling water and simmering for 10-12 minutes or until soft
- Assemble the salad by mixing together the quinoa with the cooked vegetables, a squeeze of lemon juice, pinch of salt and pepper. Finally mix through the pomegranate seeds and a few fresh mint leaves and serve with the grilled chicken breast
