Slender Muffin™ Mix
Our delicious Slender Muffin Mix is low in sugar, high in fibre and a source of protein. This muffin mix makes the best tasting banana flavoured muffins. With no added sugar, artificial colours or flavours these are the perfect low calorie snack. Enjoy with fruit and a low calorie topping of your choice! Prep, make and bake in just 20 minutes.
How to use
All you need is: 2 large eggs, 6 scoops of water (150ml), 1.5 scoops melted coconut oil and a muffin tray lined with 9 muffin cases
Prep: Preheat the oven to (200°C / 180°C Fan / 400°F / Gas Mark 6). Melt 2 large tablespoons of coconut oil and allow it to cool for 1 minute. Add the muffin cases to the tin.
Make: Mix the eggs, water, coconut oil (1.5x scoops) and the whole pouch of muffin mix together until well blended. Spoon the mixture evenly into 9 muffin cases.
Bake: Bake in the centre of the oven for 14-16 minutes or until a toothpick comes out clean.
Bakers Tip - To ensure accurate measurement of the coconut oil, add two large tablespoons to a jug and heat in the microwave for 30 seconds until melted. Once in liquid form you can measure out 1.5 x scoops to add to the mix.

They are so quick and easy to make. Very tasty and perfect for a healthy snack
Smelt lovely while cooking but although they did taste of banana the overriding taste was the artificial sweetener! And they stuck to the muffin case so each muffin ended up as only half a muffin 🤣
I look forward to having this everyday as a treat,it tastes so good.
I really like these as a low cal snack. Perfect with a cuppa when you just fancy something a bit sweet. They are really easy and quick to make up too. I like tweaking the recipe too, to make them even lower calorie per muffin!
