Strawberry, Coconut and Banana Muffins
2 large eggs
2 tbsp coconut oil
½ cup strawberries, halved
2 tbsp coconut, desiccated

Preheat oven to 180C. Melt 2 tbsp of coconut oil and add 9 muffin cases to a baking tin.
Mix eggs, water, muffin mix and coconut oil until blended. Add strawberries and stir in.
Spoon the mixture evenly into the muffin cases.
Bake in the centre of the oven for 14-16 minutes or until a toothpick comes out clean.
Sprinkle coconut on top of the muffins and leave to cool for 10-15 minutes before serving.
