Spinach & Tomato Pasta
- 2 cups (190g) dry brown/ wholegrain pasta
- 100g spinach
- 300g canned tomato, chopped
- 2 garlic cloves, minced
- 2 tsp oregano
- 1 onion, chopped
- 1 tsp chilli flakes, dried
- 1 tsp coconut oil
- 1tbsp mixed seeds
- Parmesan cheese (optional)
Add the coconut oil to the pan and fry the onions, garlic and chilli flakes over a medium-high heat.
Meanwhile boil the pasta for 10-12 minutes.
Add the spinach and tomato to the pan and continue cooking for 2 minutes or until both soften.
Turn to low heat. Once pasta is cooked, drain and add to the pan. Toss so pasta is combined with the spinach and tomato.
Serve hot and sprinkle with super seeds. Parmesan cheese is optional.
