Slender Banana Bread

Ingredients

  • 1 tsp coconut oil for greasing
  • 2 scoops Banana Split Slender Blend
  • 3 ripe bananas
  • 3 eggs
  • 1 cup almond flour
  • 3 tbsp of honey
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt
  • Topping
  • Thinly sliced banana

Method

Try out Protein World's take on your classic banana bread. With additional banana protein and the use of almond flour to make for a delicious but nutritious gluten free bake - you will be hooked in no time!
    • Preheat the oven to 180c and lightly grease a 20 x12.5 cm oven proof loaf tin
    • In a large bowl mash together the bananas with a fork.  In a separate bowl whisk together the rest of the ingredients (eggs, flour, protein powder, honey, vanilla extract, baking powder, baking soda, cinnamon and salt).
    • Once all combined mix in the mashed banana.
    • Pour the mixture into the tin and smooth with a spatula. Add the sliced banana on top and bake for 45-50 minutes or until a knife inserted into the centre of the cake comes out clean.
    • Remove from the oven and cool in the tin for a few minutes, then turn on to a wire rack to cool completely before serving.
    • Cut and enjoy!
