Healthy Mince Pies

Ingredients

  • For the mince
  • 2 apples
  • 1 vanilla pod
  • 100g raisins
  • 100g sultanas
  • 100g dried cranberries
  •  the juice of 2 oranges
  • 1 tbsp of Protein World coconut oil
  • 1 tsp of cinnamon
  • 1 tsp nutmeg
  • 1 tsp of ginger
  • For the crust
  • 220g of ground almonds
  • 200g walnuts
  • 1 tbsp honey
  • 5 medjool dates
  • 1tsp cinnamon
  • 2 tbsp Protein World coconut oil
  • 1 egg

Method

  • Preheat the oven to 180 degrees.
  • For the mince, chop the apples into small pieces (discarding the core) and place them into a large saucepan.
  • Slice the vanilla pod in half and scrape the seeds into the pan. Then add in all the remaining ingredients and combine it together. Let the mince simmer for about 30 minutes, until the apples are soft.
  • Meanwhile for the crust, place the almonds and walnuts and pulse in food processor until a flour is formed, add honey, dates, 1 tsp of cinnamon, coconut oil and egg and combine until a dough forms (if it is a little dry add a little water, if it is too moist add a little more almonds).Then sprinkle flour over a surface and roll the mix out so that it’s about half a cm thick.
  • Grease muffin tins with coconut oil and then mould the crust mix into the individual tins, once you’ve done this cut the remaining mixture into shapes, these will go on top of the pies. Then place the tray of crusts in the oven for 8 minutes, until they start to turn golden brown. Take out of the oven and allow to cool while the mince mix finishes cooking.
  • Once the mince has cooked start assembling them into the pies. Simply add two heaped teaspoons of mince into each pie before placing a star over the middle of the mince. Bake the pies again for 8 minutes.
  • Once baked leave to cool for twenty minutes then serve and enjoy
