Grilled Avocados with Herbs & Tomatoes

Ingredients

  • 1 tsp coconut oil
  • 1 avocado
  • Squeeze of ½ fresh lemon
  • 6-8 cherry tomatoes
  • Tsp of each - parsley, thyme, chives and basil
  • 1 tbsp Toasted pine nuts
  • Pinch of salt

Method

  • Pre heat the grill to 170 degrees.
  • Lightly oil the cut side of avocado and grill until the avocados are heated through.
  • Chop up whatever herbs you have (parsley, thyme, lemon thyme, chives and basil then mix with melted coconut oil and salt, toast some pine nuts and cherry tomatoes.
  • Top the avocado halves with the herbs, nuts and tomatoes, then give the lemons a good squeeze.

Serves one meal or two snacks
