Grilled avocados with herbs and cherry tomatoes
- 1 tsp coconut oil
- 1 avocado
- Squeeze of ½ fresh lemon
- 6-8 cherry tomatoes
- Tsp of each - parsley, thyme, chives and basil
- 1 tbsp Toasted pine nuts
- Pinch of salt

- Pre heat the grill to 170 degrees.
- Lightly oil the cut side of avocado and grill until the avocados are heated through.
- Chop up whatever herbs you have (parsley, thyme, lemon thyme, chives and basil then mix with melted coconut oil and salt, toast some pine nuts and cherry tomatoes.
- Top the avocado halves with the herbs, nuts and tomatoes, then give the lemons a good squeeze.
Serves one meal or two snacks
