Flaxseed Flapjack

Ingredients

  • 50g dates
  • 50g apricots
  • 100g raisins
  • 125g oats
  • 30g flax seed powder
  • 20g chia seeds
  • Juice and grated zest of 1 lemon
  • 1 tbsp honey/ agave syrup
  • 3 tbsps rapeseed oil

Method

  • 1. Line a rectangular baking tray with grease proof paper
  • 2. Chop the dates and apricots into small pieces
  • 3. Add the rest of the ingredients and mix into firm dough ball (you can do this whole process by pulsing it in a food processor if you have one)
  • 4. Empty out onto the baking tray and press it down and into the corners until it is even
  • 5. Pop in the fridge for an hour then cut into squares and store in an airtight container
  • Serves 8
