Cookies & Cream Ice Cream Sandwiches





125g cashews

70g ground almonds

4 scoops Protein World Cookies & Cream Slender Blend protein powder

4 large dates, pitted

1/2 tsp vanilla extract

1/4 tsp sea salt

2 tsp cocoa

Splash of water

250g low calore ice cream of your choice

These delicious cookies are made from cashews and ground almonds to not only make these nutty bites gluten free, but also high in fibre and vitamin E and biotin - important for healthy glowing skin, hair and nails!
  1. Blend all the ingredients except the ice cream in a food processor until mixture resembles cookie dough, adding just enough water for it to come together. (don't over process and make nut butter!). If it gets too wet, add a bit more protein powder or ground almonds until firm. Chill for at least thirty minutes.
  2. Using wet hands, shape into 12 flat circles. Place on a small tray covered with greaseproof paper and freeze until firm.
  3. Use the cookies to make sandwiches with softened ice cream. Either refreeze for later or eat straight away.
