Avocado Fries With Chipotle Sauce

Ingredients

  • Avocados 
  • 1/2  ripe avocado, peeled and sliced
  • 1 egg
  • 1 tsp Protein World coconut oil
  • ¼ cup almond or coconut flour
  • Pinch of sea salt
  • 1  tsp garlic powder
  • 2 tsp paprika
  • 1 tsp black pepper
  • Chipotle sauce
  • 1/4 Cup Non-Fat Greek Yogurt
  • 2 Tbsp Low-Fat Cottage Cheese (Vegan Cream Cheese would be great here too)
  • 1 Tsp Chipotle Chili Powder

Method

  • In a non stick frying pan, on a medium heat, add a tsp of coconut oil
  • Meanwhile, you will need three small bowls for the dipping stations. In the first add the egg, in the second add the flour and in the third combine the seasonings.
  •  Dip the sliced avocado in the egg, then the flour, and then seasonings to coat. Set on a plate in a single layer.
  • Add the avocado slices in the pan and cook for 1-2 minutes on each side or until golden. Transfer the slices to a plate and sprinkle with salt to taste.
  • For the chipotle sauce place all ingredients in a food processor, or blender and blend until smooth.
